Ginger-Carrot- Nut Bread

2 eggs
3/4 cup packed brown sugar
1/3 cup oil
1/2 cup milk
1 teaspoon vanilla
2 cups flour
2 teaspoons baking powder
1 teaspoon ground ginger
1/2 teaspoon salt
1 cup shredded carrots
1/2 cup chopped nuts of choice

  • Heat oven to 350. Grease bottom only of 8x4 loaf pan.
  • In a large bowl, beat eggs and brown sugar until creamy. Beat in oil, milk and vanilla. Beat in flour, baking powder, ginger and salt until smooth. Stir in carrots and nuts. Spread into pan
  • Bake 50 to 60 minutes or until toothpick comes out clean. Cool in pan for 10 minute's; remove to cooling rack. Cool completely, about 1 hour

Easy Peanut Butter Cookies

This is all you need for this recipe and they are really good:

1 cup peanut butter(creamy or chunky)
1 cup sugar
1 egg


Mix all ingredients until everything is blended. Scoop out into teaspoon shaped balls or you can use a small cookie scoop like I used. Press down with a fork and make a criss cross pattern. Bake at 350 for 10-15 minutes and place on rack to cool.
Makes about 2 dozen with small scoop....

BBQ Ribs

1 large onion, sliced
2 racks baby back ribs
1 (12 oz) beer or choice
2 Tbsp of favorite rib rub
favorite BBQ sauce, i used sweet baby rays


Preheat oven to 350. Spread onion slices evenly on a jelly roll pan, and place the ribs, bone side down. Pour beer over ribs, sprinkle ribs with rub. Cover pan tightly with foil. Bake for  3 hours or until tender.

When ribs are done take themout of the oven and brush both sides with BBQ sauce, cover and put back into oven for 10 to 20 minutes to heat up the sauce.

Banana Orange Bread

1 1/2 cups sugar
3 tbs. oil
2 eggs
1 1/4 cups mashed bananas
3/4 cup orange juice
3 cups flour
1 1/2 ts. baking powder
1 1/2 ts. baking soda
1/2 ts. salt
1 cup chopped walnuts

  • In a mixing bowl, combine the sugar, oil and eggs; mix well. Stir in bananas and orange juice. Combine the dry ingredients; add to banana mixture, beating just until moist. Stir in walnuts. Pour into 2 greased 8 inch bread pans. Bake at 325 for 50-60 minutes or until toothpick comes out clean. Cool for 10 minutes; remove from pan to wire rack to cool completely.

Cheesy Hashbrowns

2 lb. hash browns or grated potatoes, thawed
1 can cream of celery soup
1 pt. sour cream
1tsp. salt
dash of pepper
1/4 to 1/2 cup chopped onion
1/2 cup melted butter
1 to 2 cups grated cheddar cheese

TOPPING:

1/4 cup melted  butter
2 cups crushed corn flake crumbs


  • Combine all ingredients except corn flake crumbs and 1/4 cup of melted butter.
  • Put in 9x13 pan.
  • Crush corn flakes with rolling pin
  • Mix crushed corn flakes with 1/4 cup melted butter; sprinkle on top of casserole.
  • Bake at 350 for 45 minutes to 1 hour, uncovered.

I baked mine for 1 hour 10 minutes and they were just right

Cookie Salad

1 1/2 cups milk
2(3 oz.) pkg. vanilla instant pudding
1(16oz.) cool whip
2 small cans drained mandarin oranges
1(16oz.) can drained crushed pineapple
1 big pkg. fudge striped cookies, crushed into large pieces( save out 4 or 5 to lay on top for decoration)

  • Mix milk and pudding mix together. Add rest of ingredients and mix well. Once all mixed together put into a serving bowl and place the 4 to 5 whole cookies on top and refrigerate.

Chocolate Caramel Cookies

1 cup butter, softened (2 sticks)
1 cup plus 1 tablespoon sugar, divided
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla
2 1/2 cups flour
3/4 cup baking cocoa
1 teaspoon baking soda
1 cup chopped pecans, divided
1 package Rolo candies

  • In a large bowl, cream butter, 1 cup sugar and brown sugar. Beat in eggs and vanilla. Combine flour, cocoa and baking soda; gradually add to creamed mixture just until combined. Stir in 1/2 cup pecans.
  • Shape dough by tablespoonfuls around each candy.(I used a small and a large cookie scoop and pushed into the middle, works alot better and not so messy). In a small bowl, combine remaining pecans and sugar; dip each cookie halfway.
  • Place with nut side up on a ungreased baking sheet. Bake at 375 for 7 to 10 minutes or until tops start to crack a little. Cool for 3 minutes; removes to wire racks to cool completely. Makes about 5 dozen.

I didn't use nuts on this recipe only because we do not care for them.

Banana Crumb Muffins

1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 mashed banana's
3/4 cup sugar
1 egg, lightly beaten
1/3 cup butter, melted
1/3 cup packed brown sugar
2 tablespoons flour
1/8 teaspoon ground cinnamon
1 tablespoon butter

Pre-heat oven to 375, lightly grease 10 muffin cups or use paper liners.
In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt.
In another bowl, beat together banana's, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.(I added chopped nuts to this mixture also and they turned out great)
Bake in oven for 18 to 20 minutes or until toothpick comes out clean, take out and let cool on a cooling rack.

Meatloaf

Here is a recipe for Lipton Onion Soup Mix Meatloaf

1 envelope Lipton onion soup mix
2 lb ground beef
3/4 cup bread crumbs
2 eggs
3/4 cup water
1/3 cup ketchup

Pre-heat oven to 350. Combine all ingredients in large bowl. Shape into loaf in 13x9 inch baking or roasting pan. Bake uncovered for 1 hour or until done. Let stand 10 minutes.

Love this meatloaf and I usually make mine in a large bread pan instead of the 13x9 pan, I think it turns out better. There is a picture above.

Peanut Butter Candy Bar

2 cups oatmeal
1 cup brown sugar
3/4 cup melted butter
1 teaspoon salt
1 teaspoon vanilla
1/2 teaspoon baking soda
1/3 cup corn syrup
1-1/4 cup flour

Mix all ingredients together, once all mixed pat to the bottom of a 9x13 ungreased pan. Bake 20-25 minutes at 350 or just until light brown. DO NOT OVER BAKE!! should look soft and bubbly. Once baked, spoon teaspoons of creamy peanut butter on top. Let soften and then spread over the top.(I used 7 teaspoons of PB). Layer with a cup of chocolate chips and put back in the over for a minute to melt, spread over the peanut butter and enjoy.

Chicken Casserole Bake

1 bag egg noodles, I use the wide
1 can cream of celery
1 can cream of chicken
2 cups of cheese
4 chicken breast grilled and diced
1 cup frozen carrots
1 cup frozen corn


Get water boiling(add olive oil to the water) once boiling add noodles and cook until done. Once noodles are ready, drain and run  under cold water. While noodles are draining, add both soups into the pot that the noodles were in, you can also add the chicken, 1 cup of cheese, and the frozen veggies(you can add any veggies that you want, I just add those because that is what Hailey eats). Now the noodles should be ready and can be added to the pot and mixed all together,add salt and pepper as needed, once mixed you can add it to a large casserole dish and bake at 350 for a hour or so.
When ready to serve, add the extra cup of cheese to the top and cover.....

Cheeseburger Twist

1 1/2 pounds ground beef
1/4 cup onion, diced
1/4 cup green pepper, diced
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/4 cup shredded Colby-jack cheese
1 tube of refrigerated sheet crescent dough
1 egg
1tablespoon water
salt and pepper to taste

Preheat oven to 350. Foil line a 13x9 cake pan and spray with cooking spray.

Brown ground beef , once browned, drain grease and empty beef into large bowl and set aside to cool. Using the same pan that is slightly greased from the beef, saute onion and green pepper until soft. Add to ground beef. Add all the cheese to the ground beef and onion mixture and toss until all mixed.

Unroll crescent dough sheet onto prepared baking pan. Gently press larger to flatten curly end. Pour beef mixture down the center lenghtwise of the crescent dough, leaving about 2" on each end. Cut slits into the sides of the dough Approx. 1" wide. Fold up the starting end of the dough, then alternate sides, bringing 1" strips one at a time to the top and layer down the mixture to create a braid. Fold up the final end and press gently to secure.

In a separate small bowl, beat the egg with the water and brush over the top of the braid.

Bake for 25-35 minutes or until the crust is golden brown. I served with a fresh lettuce salad.

I also made this same recipe into single serve pockets by using big and flakey crescent rolls, all I did was unroll the crescent roll and place one triangle piece on baking dish, then I layed the second half on top and made a pocket out of it, I then added the meat mixture and filled it up, once filled I crimped the last side and sealed it shut, I baked them about 25 minutes or until golden brown.


Banana Bread

1/2 cup Veg. Oil
1 cup brown sugar
2 eggs
2 ripe bananas, sliced
2 cups flour
3 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons vanilla
1 cup milk
1/2 teaspoon lime zest


Preheat oven to 350. In a blender, blend together oil and sugar until smooth. Add eggs, one at a time and blend. Add bananas and blend. Pour mixture into a large bowl. Sift flour, baking powder, baking soda, and salt into the banana mixture. Add remaining ingredients and use a hand mixer to mix all together until mixture is well combined. Spoon mixture into a large(91/2 inch) buttered and floured loaf pan. Bake for about an hour. Carefully remove loaf from pan and place cooling rack. Serve warm with butter.

I added a half cup of chocolate chips to this as well and it turned out great. I also drizzled bread with a cream cheese icing.

Crock Pot Chicken

This is so easy guys:

Here is what we do for this:

We make between 4 and 6 chicken breast when we do this.  All you have to do is get out a crock pot, put a little water at the bottom of it and add your frozen chicken breast, once the chicken breast, add 1 can of cream of chicken or cream of celery, I add both kinds. Let it cook all day on low and it will be ready for supper time, we keep ours in for 8 hours and they are great. When supper is ready I serve with Potato's and put the chicken on a bed of rice with a veggie.

Banana Cup Cakes

1/2 cup shortening
1-1/2 cup sugar
2 eggs
1tsp. vanilla extract
1 cup mashed ripe bananas
1/4 cup buttermilk
2 cups flour
1 tsp. baking powder
3/4 baking soda
1/2 tsp. salt

In a large mixing bowl, cream shortening and sugar. Add the eggs,vanilla,bananas and buttermilk. Combine the flour, baking powder,baking soda and salt; add to banana mixture. Fill 24-36 paper lined muffin cups 2/3 full. Bake at 350 for 15-20 minutes or until toothpick comes out clean. Remove to wire racks to cool completely. Frost cup cakes with your favorite frosting of choice.

Boiled meat balls

Here is what you need to make these:

2 lbs. Hamburger
1 Egg

Put the meat in a big enough dish to mix it all together, I mix the meat and the egg together first, after it is mixed then I add these spices to the meat mixture: I add 1 cup finely chopped onion, 1/2 cup finely chopped celery, 1/4 ts. nutmeg, I add 1 ts. Pansley, Oregano, Basil, Southwest Seasoning or any other spices you might like to add to it.Mix it all together really good and set aside.

Add water to a stock pot and add the following to the water: 1/8 ts. nutmeg, Chopped Onion, Celery, Chop up some Pepper, I also add all the seasonings to the water that I added into the meat, use as much as you wish for flavor, once all is in the water, set on stove and bring to a good boil, while water is boiling you can take the hamburger mixture and make into small or medium balls, drop them into the boiling the water, once you have all the meatballs made and they are in the boiling water,  reduce the heat and keep the on a slow boil for 2 hours.

It takes a while to make but they are really good

Spaghetti Lasagna

1 small pkg. spaghetti noodles
1 cup grated cheddar cheese
1 medium container of large cottage cheese
1 tsp. oil
1 lb. ground beef
1 large prego chunky spaghetti sauce
1 cup grated mozzarella cheese


Boil spaghetti noodles with the oil, drain and put into a 9x13 greased cake pan. Sprinkle with cheddar cheese, then put the cottage cheese on top. Brown hamburger, salt and pepper, then drain the hamburger. Mix in Prego and pour over cottage cheese. Sprinkle with mozzarella cheese.

Bake at 275 for 25 to 30 minutes.

Peanut Butter Chocolate Chip Cookies

8oz. butter softened, set it out the night before works best
1/2 cup creamy peanut butter
3/4 cup sugar
1 cup brown sugar
3 cups flour
1 teaspoon salt
1 1/2 teaspoon baking powder
2 eggs(room temp)
pinch of vanilla
2 cups chocolate chips


Cream together the first 4 ingredients. I mixed on high speed for 5 minutes with mix master. Once the mixture is light in color, add the eggs, then vanilla. Mix together the flour, salt and baking powder then add to muxture. Once mixed together, add chocolate chips. Scoop dough onto parchment lined cookie sheet and chill the dough for 30 minutes before baking in a 400 degree oven for 12 to 15 minutes.

I used a large cookie scoop, these cookies will not flatten, they will rise and be cake like, they are really good. I also didn't use parchment paper as I was out, normally I use the paper, it is alot easier to take off the cookie sheet and there is no mess.

Sloppy Joe Squares

1 lb. ground beef
1 can of sloppy Joe sauce
2 cans of Pillsbury Big & Buttery crescent dinner rolls
2 cups shredded cheddar cheese
1 t. sesame seed

Brown the hamburger over medium heat until all browned, drain. Return to skillet and stir in the sauce until it is heated all the way through.
Unroll one can of the dough; place in greased 13x9 pan. press the dough on the bottom of the pan and up the sides about a 1/2 inch, once the dough is pressed and complete, add the sloppy Joe mixture, spread evenly over the dough and sprinkle with cheese.
Unroll the second can of dough and place it over the top of the mixture, it should cover the whole top. sprinkle sesame seeds on the top of the crescent roll(I didn't use sesame seeds, I used cheese instead)
Bake at 350 for 30 to 35 minutes or until the mixture is bubbly and dough is golden brown. Cut into squares and serve.

Tater Tot Casserole

1 1/2 lbs. ground chuck
1 can cream of celery soup
1 pkg. tatertots
1/4 cup onions
1 can of corn or any veggies that you want to add to it

Brown meat and onions together, drain the meat once it is browned. Spread meat into a greased 2 qt. baking dish, stir in the soup and veggies, top with tater tots and bake for 45 minutes at 400. once out of the oven top with chesse of choice and cover for 5 minutes.

Pizza Bubble

 This is really easy to make, I made it for supper tonight and it is really good.


1 lb. hamburger, browned and drained
14 oz. pizza sauce
9 oz. can of buttermilk biscuits
1 lb. Mozzarella cheese
Your favorite pizza toppings( onion, mushrooms, green pepper, black olives or whatever else you may want to add to this dish)

Cut biscuits into quarters. Stir together biscuits,meat, sauce and half
of the cheese. Add topping once you have the mixture put into the
baking dish and sprinkle the rest of the cheese on top. Cover and
bake at 375 for 30 to 40 minutes.

I also made fresh bread sticks and baked them for 3 to 5 minutes and
once they we done I brushed garlic butter on top of them.

Easy Chocolate Chip Banana Muffins

1 egg
2 cups Bisquick mix
1 1/4 cups mashed banana's
1/3 cups of sugar
3 tbs. veg. oil
1/3 cup chocolate chips

Heat oven to 400
Place paper baking cups in muffin tin, I don't use Muffin cups, i just spray the tins with cooking spray.
beat eggs slightly in bowl and stir in the remaining ingredients, stir until moist
Divide batter evenly among muffin tins
Bake about 15 minutes or until golden brown.

Banana Split Cake

1 1/2  cups of Grahm Cracker Crumbs
1 cup sugar, divided
1/3 cup butter, melted
2 pkg. (8oz) cream cheese, softened
1 can(20 oz) crushed pineapple, drained
6 medium banana's. divided
2 cups cold milk
2 pkg (4 serving size) vanilla pudding/pie filling
2 cups thawed cool whip
1 cup chopped pecans

MIX
crumbs, 1/4 cup of sugar and the butter; press firmly to bottom of 13 x 9 pan. freeze 10 minutes.

BEAT
cream cheese and remaining 3/4 cup sugar until well blended. spread carefully over crust; top with poineapple. slice 4 banana's and arrange over pineapple.

POUR
milk into medium bowl. add dry pudding mixes. beat with whisk until blended. Stir in 1 cup whipped topping; spread over banana's in pan. top with 1 cup whipped topping and sprinkle with pecans. Refrigerate for 5 hours and top with banana's before serving. keep refrigerated after serving
