We both love to cook and bake when we have time, I do most of the cooking because I am a stay at home dad right now, who is looking for a new job. Sloppy Joe and fries

Here is how I make my Sloppy Joes and homemade fries:

For the fries:

1/4 cup grated Parmesan cheese
1 tablespoon olive oil
1 teaspoon onion powder
1 teaspoon garlic powder
1/4 teaspoon pepper
1/4 teaspoon salt
2 russet potatoes scrubber and cut into eights

1. preheat oven to 425
2. place cheese, olive oil, onion powder, garlic, pepper,salt, and potatoes into a large Ziploc bag. Seal the bag, then shake to coat the potatoes. Spread potatoes onto baking sheet.
3. bake until potatoes are easy to pierce with a fork, about 25 minutes.

Sloppy Joe mix:

1 1/2 hamburger all browned up
half a onion diced into small cubes
1small can tomato sauce
2 cups of Jimmie Jay sauce(its a sauce that a local guy in the area makes and it is great, they sell it at woodman's in the meat department) or whatever BBQ sauce you want to use.

1. brown up hamburger and drain.
2. mix all together and let simmer for 1 hour stirring occasionally
3. serve on bun or just by itself.

Ginger-Carrot- Nut Bread

2 eggs
3/4 cup packed brown sugar
1/3 cup oil
1/2 cup milk
1 teaspoon vanilla
2 cups flour
2 teaspoons baking powder
1 teaspoon ground ginger
1/2 teaspoon salt
1 cup shredded carrots
1/2 cup chopped nuts of choice

  • Heat oven to 350. Grease bottom only of 8x4 loaf pan.
  • In a large bowl, beat eggs and brown sugar until creamy. Beat in oil, milk and vanilla. Beat in flour, baking powder, ginger and salt until smooth. Stir in carrots and nuts. Spread into pan
  • Bake 50 to 60 minutes or until toothpick comes out clean. Cool in pan for 10 minute's; remove to cooling rack. Cool completely, about 1 hour

Easy Peanut Butter Cookies

This is all you need for this recipe and they are really good:

1 cup peanut butter(creamy or chunky)
1 cup sugar
1 egg


Mix all ingredients until everything is blended. Scoop out into teaspoon shaped balls or you can use a small cookie scoop like I used. Press down with a fork and make a criss cross pattern. Bake at 350 for 10-15 minutes and place on rack to cool.
Makes about 2 dozen with small scoop....

BBQ Ribs

1 large onion, sliced
2 racks baby back ribs
1 (12 oz) beer or choice
2 Tbsp of favorite rib rub
favorite BBQ sauce, i used sweet baby rays


Preheat oven to 350. Spread onion slices evenly on a jelly roll pan, and place the ribs, bone side down. Pour beer over ribs, sprinkle ribs with rub. Cover pan tightly with foil. Bake for  3 hours or until tender.

When ribs are done take themout of the oven and brush both sides with BBQ sauce, cover and put back into oven for 10 to 20 minutes to heat up the sauce.

Banana Orange Bread

1 1/2 cups sugar
3 tbs. oil
2 eggs
1 1/4 cups mashed bananas
3/4 cup orange juice
3 cups flour
1 1/2 ts. baking powder
1 1/2 ts. baking soda
1/2 ts. salt
1 cup chopped walnuts

  • In a mixing bowl, combine the sugar, oil and eggs; mix well. Stir in bananas and orange juice. Combine the dry ingredients; add to banana mixture, beating just until moist. Stir in walnuts. Pour into 2 greased 8 inch bread pans. Bake at 325 for 50-60 minutes or until toothpick comes out clean. Cool for 10 minutes; remove from pan to wire rack to cool completely.

Cheesy Hashbrowns

2 lb. hash browns or grated potatoes, thawed
1 can cream of celery soup
1 pt. sour cream
1tsp. salt
dash of pepper
1/4 to 1/2 cup chopped onion
1/2 cup melted butter
1 to 2 cups grated cheddar cheese

TOPPING:

1/4 cup melted  butter
2 cups crushed corn flake crumbs


  • Combine all ingredients except corn flake crumbs and 1/4 cup of melted butter.
  • Put in 9x13 pan.
  • Crush corn flakes with rolling pin
  • Mix crushed corn flakes with 1/4 cup melted butter; sprinkle on top of casserole.
  • Bake at 350 for 45 minutes to 1 hour, uncovered.

I baked mine for 1 hour 10 minutes and they were just right

Cookie Salad

1 1/2 cups milk
2(3 oz.) pkg. vanilla instant pudding
1(16oz.) cool whip
2 small cans drained mandarin oranges
1(16oz.) can drained crushed pineapple
1 big pkg. fudge striped cookies, crushed into large pieces( save out 4 or 5 to lay on top for decoration)

  • Mix milk and pudding mix together. Add rest of ingredients and mix well. Once all mixed together put into a serving bowl and place the 4 to 5 whole cookies on top and refrigerate.
